Baby Spinach Salad with Blue Cheese, Walnut, and Cherry Crostini
Prep Time: 30 minutes Cook time: 10 minutes Serves: 6

Ingredients:

12 1/4-in-thick slices C2B® Italian Flatbread
4 Tbsp. walnut oil, divided
1/2 cup chopped toasted walnuts
8 oz. blue cheese, crumbled
6 Tbsp. minced shallots, divided
1/3 cup dried cherries, halved
6 c. Fresh Express® Baby Spinach
2 tsp. red wine vinegar
Fleur de sel or fine sea salt

Instructions: Preheat oven to 400°F. Arrange bread slices on baking sheet. Brush
bread slices on top side with 2 Tbsp. walnut oil. Bake until crisp, about 5 minutes.
Mix walnuts, cheese, 4 Tbsp. shallots, and cherries in medium bowl. Spread mixture
on toasts. Bake until cheese melts, about 4 minutes.

Meanwhile, combine spinach, 2 Tbsp. shallots, 2 Tbsp. walnut oil, and vinegar in
bowl. Sprinkle with fleur de sel; toss. Serve with crostini.
