Chipotle
Peach Glazed Chicken
Ingredients:
1/3
cup Smucker's® peach preserves
2 tbsp White House® cider vinegar
2 tbsp Bronco Bob's® Chipotle sauce
1 tsp Southern Home® ground nutmeg
1/2 tsp salt
1/4 tsp black pepper
1 pkg. Springer Mountain® Chicken
1 pkg. 14 oz. Minute® white rice
Directions:
For glaze, in a small saucepan, combine peach preserves, vinegar,
chipotle sauce and 1/2 tsp of nutmeg; heat and stir just until melted.
Set aside. In a small bowl, combine salt, pepper, and remaining _
tsp nutmeg. Sprinkle evenly onto chicken. Prepare grill for indirect
grilling. Place chicken on the grill rack. Cover and grill for 50
to 60 minutes or until no longer pink, brushing chicken with peach
glaze the last 10 minutes of grilling. Prepare rice as directed and
serve chipotle peach glazed chicken on top or on the side. Serve with
new, refreshing Diet Pepsi with Lime.
