Summer Corn Salad
Prep Time: 15 minutes Cook Time: 10 minutes Serves: 6

Ingredients:
10 Ears Corn, cleaned and husked
1 1/2 Pints SANTA SWEETS® Grape Tomatoes, halved
3 Tbsp. Dijon Mustard
4 Tbsp. Extra Virgin Olive Oil
3 Tbsp. Apple Cider Vinegar
1 Cup Fresh Basil, chiffonade
1/4 Cup Shallots, finely minced
Salt, Pepper & Sugar to Taste

Directions: Cook corn in simmering water for 5-7 minutes, remove and cool. Cut corn from cob and place in mixing bowl. Make dressing by combining vinegar, mustard, oil, and minced shallots. Combine cherry tomatoes, basil and dressing to corn. Season to taste and chill before serving.
