Curry Chicken Salad
Prep Time: 15 minutes Cook Time: 15 minutes Serves: 6
Ingredients:
3 cups cooked or Lancaster Brand®
chicken breasts, cubed (canned, fresh, cooked or frozen)
1 1/2 cups grapes, halved green or red
1/2 cup sliced celery
2 Tbsp sliced scallions
1/2 cup Grated Carrots
DRESSING
3/4 cup mayonnaise
2 Tbsp orange juice (fresh, squeezed)
1 tsp curry powder (Toasted)(Optional)
fresh ground pepper and salt, to taste
Directions:
Combine all salad ingredients. Combine all dressing ingredients in
a small bowl and whisk together until smooth. Toss the dressing with
the salad and serve.
