Italian Fish Feast
Prep time: 15 minutes Cook time: 30 minutes Serves: 4

Ingredients:
2 cups C & W® Frozen Broccoli Flowerets
2 cups Riceland® Extra long grain white rice
4 cups Kitchen Basics® Chicken Stock
2 tsp. salt
1/2 tsp. Black pepper
3 Tbsp. Smart Balance® Cooking Oil
4 Tbsp. Smart Balance® Spread
1 cup onions (diced)
2 Tbsp. Garlic Cloves (minced)
2 Tbsp. Red wine vinegar
1 Tbsp. Dried Basil and Oregano
1 Tbsp. Crushed red pepper
4 oz. Cream
4 Bay Prime® Tuna Steak or Cod fillets
1 cup Adam's Reserve® extra sharp cheddar Cheese

Directions:
Thaw broccoli flowerets and drain water. Prepare rice per package directions except
substitute chicken stock for the water. Add salt, pepper,1/2 cup cheese. Cover and keep warm. Sauté onions in oil -cook 3-4 min add garlic, cook 2 mins. Stir in red wine vinegar, basil, oregano, and red pepper-cook 5 minutes. Meanwhile sauté tuna in spread over med heat for 3-5 minutes per side. Add cream and broccoli. Stir through to slightly thicken. Serve over rice and sprinkle with cheese.
