Sausage and Tortellini Soup Ingredients: 3 Tbsp.
extra-virgin olive oil Instructions: Heat 1 Tbsp. olive oil in a heavy Dutch oven and sauté sausage coins until browned. Remove from pot, reserve. Add 2 Tbsp. olive oil and sauté onion and garlic until translucent, about 5 minutes. Return sausage to Dutch oven. Add stock, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes. Add
tortellini to soup and cook until tender, about 8 minutes. Season
soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle
with cheese, serve. |
