Italian Sausage and Tortellini Soup
Prep Time: 30 minutes Cook time: 45 minutes Serves: 6

Ingredients:

3 Tbsp. extra-virgin olive oil
1 lb. Applegate® Sweet Italian Organic Chicken Sausage, cut into 1/2-inch coins
1 cup chopped onion
2 lg. garlic cloves, sliced
5 cups chicken stock
1 8 oz. can tomato sauce
1 lg. zucchini, sliced
1 lg. carrot, thinly sliced
1 med. green bell pepper, diced
1/2 cup dry red wine
2 Tbsp. Spice Hunter® Dried Basil
2 Tbsp. Spice Hunter® Dried Oregano
8 to 10 oz. purchased fresh cheese tortellini
freshly grated Parmigiano-Reggiano cheese

Instructions:

Heat 1 Tbsp. olive oil in a heavy Dutch oven and sauté sausage coins until browned. Remove from pot, reserve. Add 2 Tbsp. olive oil and sauté onion and garlic until translucent, about 5 minutes.

Return sausage to Dutch oven. Add stock, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes.

Add tortellini to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with cheese, serve.
