Mango & Cantaloupe Salad
Prep Time: 25 minutes Cook Time: 0 minutes Serves: 10

Ingredients:
1 Cantaloupe (skinned, seeded and scooped)
2 Mangoes (skinned, pitted, and diced)
1 Package Spring Mix
1/4 Cup Looza® Peach Nectar
3 Tbsp Star Rice Wine Vinegar
1/2 cup Light Textured Olive Oil
1 tsp cayenne pepper (optional)
To Taste Salt

Directions: Place Cantaloupe in large bowl with diced mangoes and set aside. Make vinaigrette by mixing peach nectar, rice wine vinegar, and cayenne pepper in small bowl. Whisk slowly, add olive oil into peach vinaigrette mix until emulsified into creamy dressing. Taste vinaigrette and check for seasoning. Now in a large bowl add all ingredients except dressing. Add all of dressing to edges of bowl and toss till well coated, serve at once.
