Pork Chops with Toasted Spice Rub and Apple Dressing
Prep Time: 15 minutes Cook time: 40 minutes Serves: 4

Ingredients:
12 apples, Gravenstein or McIntosh
2 Tbsp. butter
2 Tbsp. fresh lemon juice
1/2 tsp. sea salt
1/3 cup honey
4 Beeler's® center-cut pork chops, 12-ounce each
Sea salt
2 Tbsp Sukhai's® Madras Vegetable Spice Mix, toasted
2 Tbsp. extra-virgin olive oil
1/3 cup dry white wine

Instructions: Preheat oven to 425°º F. For applesauce, peel and core the apples and cut into 1-inch chunks, place in a large bowl. Heat a large skillet med-high heat. Add butter. When butter begins to brown, add lemon juice, then add apples and salt. Cook until the apples just begin to color, about 4 minutes.

Stir in the honey. Roast the apples in the oven until soft and lightly caramelized, about 12 minutes. Fork mash for a chunky applesauce. Reduce oven heat to 350°º F. Season pork chops with salt and toasted spice rub. Heat oil in an ovenproof skillet over med. heat and sear the chops until golden brown, about 4 minutes per side. Place chops on baking sheet. Remove excess oil from skillet.

Bake chops until just cooked through, about 8 to 10 minutes. Remove to a serving platter. Over med. heat, add wine to skillet, stir, reduce to 1 to 2 tablespoons; add 1/2 cup of the apple sauce and bring to a simmer. Spoon over each chop.
