Pork Satay with Apricot Dipping Sauce
Prep Time: 30 minutes Cook time: 15 minutes Serves: 6 small plates

Apricot Dipping Sauce
1/2 cup St. Dalfour® Apricot Preserves
1 Tbsp. water
2 tsp. fresh lime juice
2 tsp. soy sauce
1 tsp. Dijon mustard
1/4 tsp. minced peeled fresh ginger

Pork Satay
1/3 cup minced shallots
3 Tbsp. vegetable oil
2 Tbsp. oyster sauce
2 Tbsp sesame seeds, toasted
2 Tbsp. minced lemongrass
1 Tbsp. Asian fish sauce
1 garlic clove, minced
1 tsp. tamari
Spice Hunter® Black Pepper to taste
1-1/2-lb Beeler's® Pork Cutlets, cut crosswise into 3-inch-long pieces
6 inch long metal skewers

Instructions: Purée all apricot dipping sauce ingredients in a blender until smooth. Mix first 9 ingredients in medium bowl. Using sharp knife, cut lengthwise into 1/4-inch-thick slices. Repeat with remaining pork, forming 30 pork scallops. Thread 5 scallops onto each skewer. Arrange skewers on rimmed baking sheet. Brush sauce over both sides of pork. Preheat broiler. Broil pork until cooked through, about 2 minutes per side. Serve satay with apricot sauce.
