Satay with Apricot Dipping Sauce Apricot
Dipping Sauce Pork
Satay Instructions:
Purée all apricot dipping sauce ingredients in a blender until
smooth. Mix first 9 ingredients in medium bowl. Using sharp knife,
cut lengthwise into 1/4-inch-thick slices. Repeat with remaining pork,
forming 30 pork scallops. Thread 5 scallops onto each skewer. Arrange
skewers on rimmed baking sheet. Brush sauce over both sides of pork.
Preheat broiler. Broil pork until cooked through, about 2 minutes
per side. Serve satay with apricot sauce. |
