Spanish Rice with Chicken
Directions:
In a small saucepan bring 2 cups of water to a boil, stir in rice,
remove from heat and let stand. Heat Extra Virgin Olive Oil in a large
skillet over medium flame until hot. Season chicken with salt and
pepper then sauté until thoroughly cooked, remove from heat.
Add onions and peppers to pan and sauté until onions are transparent
and tender. Chop chicken into bite size pieces and add to cooked vegetables.
Stir in salsa and rice over low heat until well combined. Season to
taste and serve with bread and olive oil for dipping.
