Sweet Potato Chicken Casserole
Prep Time: 25 minutes Cook Time: 1 hour Serves: 4

Ingredients:
1 Tbsp. Olive oil
1 lg. onion
1 clove garlic, finely chopped
2 lbs. sweet potatoes, peeled and diced
2 carrots, diced
4 skinless, boneless chicken breasts- diced
2 Tbsp. all purpose flour
2 cups Imagine® chicken broth
1 cup dry white wine
1/4 cup Land O Lakes® half and half
Swiss Castle® Chocolate Fondue

Directions: Preheat oven 400 degrees F. Heat oil in skillet, add onion and garlic, cook until golden. Mix in sweet potatoes and carrot cook a few minutes until slightly brown. Move the vegetables to side of pan and add chicken. Sear on all sides. Scatter flour on top and stir in. Gradually add chicken broth mixing carefully. Pour in wine and mix thoroughly. Transfer to casserole dish and cover. Bake 1 hour. Let cool slightly and stir in half and half.

For dessert enjoy Swiss Castle® chocolate fondue with your favorite dippers. ENJOY
